Nothing says spring and summer quite like the fresh tart flavour of lemon. The only thing that makes lemon desserts better, in my humble opinion, is lemon desserts with raspberry. I’m a total sucker for that lemon raspberry loaf that Starbucks serves in the summer months. Normally I’m not one to bother with anything but my caffeine fix – when coffee is the target I am somewhat like a homing missile – but I’ll make an exception for lemon raspberry loaf. These Easy Lemon Raspberry Cupcakes are inspired by those flavours- tart lemon, sweet creamy frosting, and rich raspberry.

This cake recipe is not fussy. The most important thing is to sift your dry ingredients into the wet ingredients- this helps to make sure you don’t leave any pockets of dry flour throughout your batter. Always use fresh lemon juice and zest your lemons right before you start baking.




  • ½ cup canola oil
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest and juice of 2 lemons
  • 2 cups flour
  • 1 ¼ cups sugar
  • 1 Tablespoon baking powder
  • ¼ teaspoon salt





  • 1 cup softened butter
  • 3 cups icing sugar
  • 1 teaspoon vanilla extract
  • 1-2 Tablespoons whipping cream (or lemon liqueur for something special)

Preheat oven to 350F. Line cupcake tins with liners.
In a large mixing bowl, which the wet ingredients and the lemon juice and zest together until well combined. Sift the flour, sugar, baking powder and salt into the wet ingredients and stir to combine. Do not overmix.
Fill the cupcake liners 2/3 full with batter. Bake for 25 minutes, or until the cupcakes spring back when pressed with a finger.
Add the frosting ingredients to the bowl of a stand mixer. Place a dish towel over the mixer (to prevent an icing sugar explosion) and start on low, gradually increasing the speed to high. Whip for 3-5 minutes, until the frosting is smooth and light.
