Okay, you make a pot of coffee on your way out in the morning but you slept in a little and only have time for one cup.  You can’t let all that caffeinated goodness go to waste.  Take the leftover coffee and pour some of it into an ice cube tray - pop that in the freezer and transfer the rest to a pitcher and refrigerate.  When you get home...voila, coffee ice for  your after dinner iced cafe mocha....
or...try a Thai style iced coffee as a real sweet treat after a spicy meal.  It can be fancied up and served as dessert or just offered as a quick pick me up mid-afternoon on a hot day.  The recipe is simple, it just takes a bit of time....
 
Here is what you will need;
 
4 whole Green Cardamom pods
¾ cup coarsely ground dark-roasted coffee
2 cups boiling water
lots of ice
1/3 cup sweetened condensed milk
Whipped cream for garnish (optional)
 
Break open the cardamom pods and grind the tiny seeds to a powder with a spice grinder or a mortar and pestle.
Combine the ground cardamom and coffee in a sieve lined with cheesecloth and let it rest over small pot. Pour boiling water over the coffee and cardamom and let steep for 10 minutes, then take the sieve out of the brew & discard.  

Divide the coffee equally between two tall glasses filled with ice. Hold a spoon over the coffee in the first glass, and gently pour the sweetened condensed milk over the spoon so that it floats in a layer at the top of the glass. Repeat with the second glass, serve your coffee garnished with whipped cream and a long spoon or straw to stir it.    
 
Oh and PS – feel free to add some booze, it’s not traditional but sometimes that’s okay!
