Bananas Foster is a fantastic old school dessert that originated in New Orleans. Not typically a fan of bananas, but a big fan of boozy desserts - I thought I would try this “quick” version with fresh pineapple just for a change of pace. It’s delicious & so easy, you’ll be whipping this up anytime you see those glorious pineapples on sale at the supermarket.
4 tablespoons unsalted butter
½ cup brown sugar
Pinch of best quality ground cinnamon
½ ripe pineapple—peeled, cored and cut into 8 long spears
½ cup dark rum
Vanilla ice cream, for serving
In a large frying pan, melt the butter over high heat until lightly browned. Stir in the brown sugar and the cinnamon – stir to combine. Add the pineapple and cook over moderate heat, shaking the skillet, until the sugar is melted and the pineapple is slightly tender, about 2 minutes. Flip the pineapple spears. Add the rum, carefully ignite and cook until the flames subside. Transfer to plates and serve with ice cream.

TRUE Lemon & TRUE Lime are a tasty, very convenient find.
It seems I never have a fresh lemon or lime when I need one. Too often I buy them, forget I have them and they just end up in the trash. When I remember I have them, as soon as I need one, it is quite often rock hard or mouldy. Seems my timing is rarely perfect. Now I keep the TRUE Lemon & Lime in the pantry and when I need it, it’s there at my finger tips. Actually, better than fresh in some cases.
True Lime and True Lemon started in the grove where fresh limes and lemons are selected for their superior flavour. Cold pressing and crystallizing the fruit locks in their flavour at the peak of freshness so True Lime or Lemon tastes better than most of what you can actually find in the store. TRUE’s fresh taste and convenience means you can use lemon & lime in a million different ways! Try adding it to butter and roasting your salmon with it, add it to rice pilaf or roasted potatoes for that little bit of Greek flair. Make a marinade for your chicken or shrimp, add it to a plain glass of water, fold it into whipped cream or stir it into blueberries & vanilla yoghurt, mash it into avocado and brighten up your guacamole. Use your imagination and keep some on hand, I think are going to love it as much as I do.
